Taco Mince Filled Bell Peppers

We decided to try something new for dinner today.
Tacos is very popular on Fridays in Sweden, we all call it Taco Friday. But we wanted to make it a bit more…. luxurious.

Taco Mince filled Bell Peppers it is!!

Taco Mince filled Bell Pepper.
(recipes are for 2 ppl


  • 50 ml tomato sauce (or if you run crushed tomatoes with an immersion blender)
  • Garlic and onion spices (basically just dried and ground)
  • Paprika powder
  • Smoked paprika
  • Cayenne pepper
  • Salt
  • Pepper
  • 6 tbsp homemade mayo

First mix the spices with the tomato sauce, then add the mayo and mix some more.
Taste it and add spices as you please.

 Taco Mince

  • 350 g mince
  • 6 tbsp taco salsa (we buy already made, organic without sugar)
  • Taco spices (make your own, the store bought has too much sugar)
  • 100 ml coconut cream
  • 2 garlic cloves
  • 50 ml tomato sauce (again, you can mix crushed tomatoes with an immersion blender)
  • Smoked paprika
  • 1 tbsp honey
  • Coconut fat for frying

Fry the mince and then add all the spices and other ingredients.
Let the mince summer in the sauce until creamy

Put oven on 225 degrees C.

Cut the top off two semi large bell peppers (capsicums). Fill them up with the mince.
You can add cheese on top if you eat cheese.
Place in the oven (in an oven dish) for about 30 min.

Serve with the salsa and the tacomayo. Or just a salad and garlic mayo.
