Paleo Pickled Cucumber

All throughout summer, they have vegetable, fruit and berry stands at the ”market place” where I currently live.I bought some stuff yesterday, among them some cucumbers, or perhaps they’re called gherkins…? They’re a smaller kind of cucumber, which one most often make pickle out of.

I was craving pickles and so I decided to make some. Only thing is….I won’t be able to eat them for some time 😆
This is what I used:

  1. 5 small cucumbers
  2. 500 ml water
  3. 100 ml vinegar essence
  4. 1 tbsp honey
  5. 1 tbsp coconut sugar
  6. A little white pepper and black pepper
  7. A bunch of dill 

Put all the ingredients, except the cucumbers and dill, in a pot. Let it come to a boil and then turn down the heat and let it simmer for a bit. Take off the stove and let it cool.

Slice the cucumber (or leave them as is) and place in a glass jar together with the dill. Pour the liquid over so that it covers all the ingredients in the jar. You might have to add some water to it. 

Place the jars in the fridge and let it sit at least 2-4 days before eating it.


Update: they are to DIE for!! So yummy. Try it! 😊  
 The water looks dark, but that’s because I used honey and coconut sugar which is brown. 😊
