Mediterranean Inspired Fish Dish

This sunny Tuesday here in Gothenburg (just moved here and have been crazy busy, hence the silence on the blog) we will have fish for dinner.

It´s a tradition in Sweden to have fish on Tuesdays. Maybe in other parts of the world as well?

This is Mediterranean inspired, with sundried tomatoes, pesto and other lovely flavors. No olives though as my partner hates them, hehe… I´ll have them on the side.

Recipe is for 2-4 portions

  • 50 ml olive oil
  • 500 g white fish
  • 2 grilled bell peppers
  • 20 g sundried tomatoes
  • 150 g feta cheese
  • 200 ml coconutcream
  • 200 ml crushed tomatoes
  • 50 g hard cheese (one with lots of flavor and fat)
  • 2 tbsp basil pesto
  • 1 tbsp lemon juice
  • fresh basil (as much as you like, can also be omitted)

Turn oven to 200 degrees (392 F). Cut the red bell peppers in half and remove the seeds. Then put some olive oil in an oven dish and place the bell peppers in the dish, skin up. Place in the oven for 20-30 min, until the skin is bubbly and has a little color. Take it out and let it cool. Then cut it in to smaller pieces.

Turn oven down to about 175 degrees C (347 F). Pour the rest of the olive oil in the oven dish in which you grilled the bell peppers. Place the fish in the dish. Then put finely chopped bell peppers, sundried tomatoes, feta cheese and fresh basil on top of the fish.

In a bowl, combine the crushed tomatoes, coconut cream, pesto, salt and pepper, lemon juice and grated hard cheese. Pour this over the fish and the other ingredients.

Put the dish in the oven for 20-30 min, until it has a golden color. Use a fork to see if the fish is done, by sticking it in to the gratin.

Serve with rice (for the once eating more carbs and moving more), or cauliflower rice, and/or a nice green salad.
