Toffee, or knäck as it’s called in swedish, is probably one of the most popular and traditional treats in Sweden around Christmas. A great treat that is sweet and get stuck in your teeth.
I used a recipe by Clean Eating by Annika. With a small change.
For about 40-50 pieces:
- 250 ml coconut cream
- 100 ml honey
- 100 ml coconut sugar
- 3 tbsp butter (you can also use ghee or coconut oil)
Pour all ingredients in a non-stick pot, or a pot with a thick bottom.
Bring to a boil while stirring, then turn down the heat and let simmer for about 40 min, or longer if you want a harder butterscotch.
stir regularly so that it doesnt burn.
You can check the toffee by having cold water in a glass of water. Pour a little of the toffee in the glas and if you can then pick it up and roll it in to a boll, it’s done. Otherwise, let it keep boiling a bit longer.
Once it’s done, pour in to little toffee molds. Then let cool in room temperature, outside (if cold), or in the fridge.
