We had friends over for a board games night yesterday.
My partner made some roasted and salted cashew nuts and chocolate covered almonds.
I made Berry Jelly Sweets, (original recipe in swedish here).
The jelly sweets were a success! Everyone loved them and they got eaten faster than I had time to say ”enjoy!” 😀
I made them with only raspberries, but next time I’ll try other berries as well.
- 300 ml berries of choice
- 10 gelatin leafs or 5 tsp gelatin powder
- 1-2 limes
- 50 ml coconut oil
- 1 tbsp honey (can be omitted)
Put the gelatin leafs in cold water.
Put the berries and honey in a pot and bring to a boil. Squeeze the lime juice in to the pot.
Take the pot from the stove and add the coconut oil and gelatin leafs. Stir until the gelatin leafs have melted. Let cool for 5-10 min.
Use an immersion blender and mix the berry mixture.
Pout the mixture in to molds or put baking paper in to an oven dish or similar and pour the mixture in to that.
Place in the fridge until set (a couple of hours)
Take them out of the molds. If you poured in to an oven dish, take out the whole berry gelatin mixture and then cut in to little squares.
Since posting this, I’ve made it with both blueberry and also using mango! It was delicious! Blueberry Jelly Sweets are my favorite so far. In the Rasberry Jelly Sweets I also add a Little vanilla which gives it a nice touch.
You can also ad coconut milk to these, or just make them from coconut milk and vanilla powder. Coconu milk, vanilla powder, cinnamon and perhaps some cardamom gives it a nice taste as well, almost like chai tea. =o)
