Blueberry and coconut porridge

I really do love porridge!
It’s comforting on colder, rainy days. It’s great as both breakfast, lunch or dinner.
Today I made a new kind of porridge and it was delicious!
Recipe below.

Blueberry and Coconut Porridge
(for 1 person)

  • 2 eggs
  • 1 tbsp coconut flour
  • 1 tbsp almond flour
  • 100 ml coconut milk
  • 50 ml blueberries
  • a pinch of vanilla powder

Directions:

Put everything in a pot and stir on medium to high heat until it has reached the wanted consistency.

Serve with coconut milk or a nut milk and berries. I used Swedish wild blueberries (bilberries) and Swedish wild raspberries
